Maray adopts a proactive approach to food waste, all food waste is separated and collected by a third party to be converted into green energy. Even the coffee grounds from the restaurant’s machines are given a second life as compost, cared for by the operations manager on her personal allotment.

By implementing filtered water machines, Maray Manchester eliminates the need for approximately 15,500 glass bottles annually at their site alone, significantly reducing waste and resource consumption.

The Manchester location is fully electric, with a 100% green electricity supply, aligning the restaurant’s energy use with its sustainability values.
4. Cooking Oil Recycling
Used cooking oil from Maray’s kitchens is collected and recycled, including its containers, minimising waste and promoting circular economy principles.
